Handy, Budget-friendly Lunch Recipes
When you have a lunch box and an ice pack, anything goes. You can carry anything around with you since the contents will be kept at adequate temperatures.
So, for each lunch combine at least one food item from each of the Food Guide groups.
- Don’t forget to include grain products (whole grain bread, rice, cereal or pasta);
- Fruits and vegetables (preferably fresh, canned or juice);
- Dairy products (milk, chocolate milk, cheese or yogurt); and
- Meat and substitutes (meat, fish, chicken, eggs or legumes).
Sushi mini
- 2 slices of bread, pressed (with a rolling pin)
- 1 can (85 g/3 oz.) flaked light tuna seasoned as desired (lemon & pepper, sundried tomato & basil, tomato & onion)
- 45 mL (3 Tbsp) cream cheese
- Carrot and/or cucumber sticks
Blend the tuna and the cream cheese together until smooth. Spread the bread slices with approximately 30 mL (2 Tbsp) of the mixture. Place some of the vegetable sticks along the widest part of the bread and roll. Slice the rolls approximately 1 cm (½ in.) thick.
Note: The tuna mixture can keep for up to 3 days, in an airtight container, in the refrigerator.
